This recipe was a big hit!
These fluffy, muffin-like cookies are a healthy, hearty and satisfying sweet treat. Bella loved them, Mike ate three, and we happily shared them with neighbors surrounding our new land just outside of town.
A few things before you try this recipe:
1. There is some controversy surrounding PB2 — critics call it “processed,” questioning the benefits of stripping fatty oils away. I did my research and found the product free of preservatives and artificial sweeteners, with three pronounceable ingredients: peanuts, sugar, and salt. Plus, it also has 85% less fat calories than regular peanut butter. I’m not much of a calorie counter, but every little bit helps! If you prefer to use natural peanut butter to PB2, knock yourself out and let me know how it goes.
2. These cookies are not sugar-free, gluten-free, dairy-free or vegan. Make them dairy-free by subbing chocolate chips for nuts and vegan by subbing applesauce or a ripe banana for the egg. I don’t believe real sugar in moderation is a big deal — obviously the more natural, the better. (Please… no Splenda, people!)
1/2 cup: Sugar
1/2 cup: Packed light brown sugar
1 tsp: Vanilla extract
1 tsp: Baking soda
1/2 tsp: Sea salt
2 Tbsp: Pure maple syrup
1/4 cup: Water
1 cup: PB2 (powdered peanut butter)
1 1/2 cup: 100% Whole wheat flour
1 cup: Dark (70% cacao or higher) chocolate chips
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. In a medium-sized bowl, cream together both types of sugar, egg, vanilla, baking soda, salt, maple syrup, water and PB2. Beat until smooth. Add flour, beating until mixture is well combined. Add chocolate chips. Dough will be very sticky. Drop tablespoon-sized balls onto prepped baking sheets. Press top of each cookie with a fork to make parallel lines; flattening cookies to about 1/3 to 1/2 inch thick. Bake cookies for 10 minutes. Remove from oven, and transfer to a rack to cool. Yields about 30 cookies.
